About Dr. Vivian Zeng
Vivian Zeng instructs students in Nutrition for Physical Activity & Health and Clinical Nutrition and Diet Therapy. Her research investigates micronutrient bioavailability, dietary antioxidant consumption, and vascular endothelial function during prolonged endurance exertion. She actively mentors undergraduate student researchers examining nutritional intake patterns and fueling strategies among competitive regional distance runners.
Dr. Vivian Zeng is a member of the Department of Kinesiology in the School of Nursing & Health Sciences.
